Dear student,

Tartaric acid is added to neutralise the sodium carbonate formed on heating by the decomposition of NaHCO3. If it is not added, the cake would taste bitter due to the presence of sodium carbonate in it.

The
blue coloured copper sulphate crystals turns white due to the loss of water molecules. The formula of copper sulphate is CuSO4.5H2O. When copper sulphate is heated, it looses water molecules and hence it looses blue colour.
