Why water is poured to extinguish fire on a burning substance ?

Ignition temperature is the lowest temperature at which a substance catches fire.
As water is poured over a burning substance, it absorbs heat from the substance. This results in lowering down of the temperature of the substance below the ignition temperature. As a result, the substance stops burning.
