This reaction shows the property of conc. sulphuric acid as a dehydrating agent. It dehydrates sugar crystals.
$C_{12} H_{2} 22 O_{11} + n H_{2} S O_{4} \to 12 C + 11 H_{2} O + n H_{2} S O_{4}$
Black spongy charred mass of carbon is obtined and the steam is evolved.
