Colloid

  • "A colloid is a heterogeneous system in which one substance is dispersed (dispersed phase) as very fine particles in another substance called dispersion medium".
  • The dispersed phase is that which is distributed or which is present in the form of colloidal particles. The medium of dispersion is the substance that colloidal particles are dispersed in.

Colloids are classified on the basis of the following criteria:

(i) Physical state of the dispersed phase and the dispersion medium

(ii) Nature of interaction between the dispersed phase and the dispersion medium

(iii) Type of particles of the dispersed phase.

Milk:

  • Milk is a colloidal system that consists of a dispersed phase and a dispersion medium
  • The disperse phase of the milk is liquid.
  • The dispersion medium of milk is liquid.

Type of colloid

  • The colloid form by milk is an emulsion.
  • “If a mixture of two immiscible or partially miscible liquids is shaken, a coarse dispersion of one liquid in the other is obtained which is called emulsion.”
