Fermentation:

Aspergillus niger, Clostridium butylicum and Lactobacillus are organisms that carry out the process of fermentation. Fermentation is a process by which organisms are able to derive energy from organic compounds under anaerobic conditions. Also, organic acids are produced during this process.





Organic acids produced:

The production of organic acids as an end product of fermentation by these organisms is exploited commercially. The following are the organic acids produced by the organisms:-
(i) Aspergillus niger (a fungus) produces citric acid.
(ii) Clostridium butylicum (a bacterium) produces butyric acid.
(iii) Lactobacillus (a bacterium) produces lactic acid.
