What is rancidity? Give some examples and some precautions also.

Rancidity:

  1. It is a condition in which aerial oxidation of unsaturated fat present in food gives it an unpleasant flavour and odour.
  2. Rancidity makes food undesirable for consumption.
  3. This process is also called rancidification.

Example of rancidity:

  1. Food when exposed to atmospheric air for a long duration becomes rancid.
  2. Butter changes its taste and smell when kept in an open atmosphere for a longer duration.

Precaution to prevent rancidity:

  1. Food should be kept in sealed containers.
  2. Food that needs to be refrigerated.
  3. Foods containing fat and oil can be packaged in nitrogen gas to prevent rancidity.
  4. To avoid rancidity, food should be stored away from light.
  5. Antioxidants can be added to food.
