When we boil salt and water we get salt back so by doing the same process why we can't get sugar back?

Evaporation:

  • It is the process by which any substance in a liquid state is changed to its gaseous state.

Separation of salt from salt solution:

  • When a salt solution is boiled in a beaker, the water in the solution will evaporate and salt will be left behind in the beaker. Hence, salt can be separated from the salt solution.

Separation of sugar from sugar solution:

  • If a sugar solution is boiled in a beaker, the water in the solution will evaporate and the sugar will be left behind. But the sugar thus obtained will be charred. This is because the sugar's carbon, oxygen, and hydrogen atoms evaporate as various organic components, leaving behind a dark, bitter form of sugar.
  • Hence, crystallization is one of the best methods to separate sugar from its solution. We can observe the formation of sugar crystals in a sugar solution when it is heated and then allowed to cool naturally. There are no impurities in these crystals.
  • As a result, crystallization allows us to separate sugar from its solution.
