Proteins are the macronutrients required by plants and animals for overall growth.
In animals, they are called building blocks of the body as it is required for muscle building and growth.
Reason for pulses to be rich in proteins:
Pulses belong to a family of leguminous plants which live in symbiotic relationships with Rhizobium bacteria.
Rhizobium is a bacteria that live in root nodules of leguminous plants and derives shelter and nutrition from the plants; in return, it fixes atmospheric nitrogen into ammonia which plants can take to fulfill their nitrogen needs.
As pulses plant has lots of nitrogen, they are able to synthesize more proteins.
Thus, pulses being leguminous plants have Rhizobium in their root nodules, due to which they have a good amount of nitrogen for high protein synthesis.
