  • These are formed by the reaction of an alcohol or phenols and carboxylic acid in presence of concentrated Sulfuric acid.
  • For example - the synthesis of Ethyl ethanoate
  • Esters have a sweet smell and are responsible for the sweet smell of many fruits.
  • For example - Ethyl ethanoate is present in pineapples and is responsible for the sweet smell of the fruit.
  • Esters have a weak intermolecular force of attraction. So, they are volatile. Volatile compounds can impart fragrance or aroma.
  • These compounds have a specific chemical structure and configuration which is also responsible for their smell.
  • Hence, esters have a sweet smell.
