Why do esters smell stronger in water?

Open in App
Solution

Esters:

  1. Esters are chemical particles made by combining an oxoacid and a hydroxyl substance like liquor or phenol.
  2. In contrast to alcohols, esters do not have intermolecular hydrogen bonding.
  3. Esters typically smell sweet.

Reason for Esters smell stronger in water:

  1. Esters have a distinct odor due to the weak intermolecular interactions they exhibit.
  2. In the gas phase, this encourages ester molecules to penetrate and hit the nose.
  3. Esters are not soluble in water hence it floats on water causing it to easily get mixed in the gas phase.
  4. Hence, they smell stronger in water.
  5. They are responsible for the fragrances of wintergreen, banana, and cherry.
