The solution having equal molecules of D-glucose and D-fructose is termed invert sugar. Hydrolysis of sucrose (dextro rotatory) gives equimolar mixture of glucose (dextro rotatory, +52.5o) and fructose (laevo rotatory, -92.4o). The mixture on the whole is laevorotatory and is called invert sugar. The process is called inversion. Inversion of sugar follows first order kinetics. The rate of inversion is directly proportional to concentration. Thus, Both Assertion and Reason are correct but Reason is not the correct explanation for Assertion.
