Emulsification is the breakdown of large fat molecules into small providing larger surface area for the pancreatic lipase to digest fats into fatty acids and glycerol. The bile salts present in the bile(secreted by the liver), are responsible for the emulsification of fats in the intestinal lumen, they reduce the surface tension of fat droplets, causing their breakdown into many smaller ones. A stable emulsion of fat is thereby formed.
