To find out the fraction a given figure represents we follow the steps given below:

(i) Identify the number equal parts in which the figure is divided

(ii) Number of parts that are coloured or shaded

The fraction that they represent = $\frac{\text{Number of parts coloured}}{\text{Total number of equal parts}}$

Hence, the above figures represent the fractions $\frac{5}{5}$, $\frac{3}{5}$ and $\frac{2}{5}$ respectively.

Now, $\frac{5}{5}$ > $\frac{2}{5}$.

Therefore the fractions $\frac{3}{5}$ will be subtracted from $\frac{5}{5}$.

$\frac{5}{5}-\frac{3}{5}=\frac{5-3}{5}=\frac{2}{5}$
