The capacitance is given by

It only depends on $\epsilon$ of the medium, Area of the plates and separation between plates.
Even though, we have an equation that says, $C=\frac{Q}{V}$
In that equation, C is a constant. i.e., Q and V will always change by the same factor and cancel out. Therefore it doesn’t depend on the charge on the plates or the potential difference between them.
