Cut pieces of beetroot do not leave the colour in cold water but in hot water

Cut pieces of beetroot. it do not leave its colour in cold water but do so in hot water. These is because the plasma membrane of beetroot cells denatures & breaks down at high temperature causing content of cell i.e colour to leak out in hot water.

At cold temperature,the plasma membrane does not break or denature,so no colour is released out in cold water.
