Vinegar is dilute solution (7-8%) of acetic acid. Dilute (15%) ethyl alcohol or sugar solution is fermented by Mucoderma aceti (Acetobacter aceti) in presence of air. CH3−CH2−OH+O2Acetobacteraceti−−−−−−−−−−→30−35oCCH3−COOH Vinegar (i)Lime−−−−−−→(ii)H2SO4CH3−COOH acetic acid Vinegar is neutralised with lime to form calcium acetate. On distillation with conc H2SO4, calcium acetate gives pure acetic acid. Esterification: CH3−COOH+CH3−CH2−OHconc.H2SO4−−−−−−−→CH3−COOCH2−CH3
