Describe with diagram the quick vinegar process for preparation of CH3COOH and write its reaction with C2H5OH.

Vinegar is dilute solution (7-8%) of acetic acid.
Dilute (15%) ethyl alcohol or sugar solution is fermented by Mucoderma aceti (Acetobacter aceti) in presence of air.
CH3CH2OH+O2Acetobacteraceti−−−−−−−−−3035oCCH3COOH Vinegar (i)Lime−−−−−(ii)H2SO4CH3COOH acetic acid
Vinegar is neutralised with lime to form calcium acetate. On distillation with conc H2SO4, calcium acetate gives pure acetic acid.
Esterification:
CH3COOH+CH3CH2OHconc.H2SO4−−−−−−CH3COOCH2CH3
