To follow the action of sulfuric acid:
Sulfuric acid is a strong dehydration agent, which means it can make intangible water from those substances with which it reacts.

So when sulfuric acid is added to carbohydrate and sugar, it removes hydrogen and oxygen from them. And just leaving behind the carbon which looks like brown sugar.
