Explain denaturation of proteins.

Denaturation of proteins can be brought about by changes in pH, temperature, presence of salts or some chemical agents. The complex three dimensional structure (conformation) of proteins is disrupted. Biological activity of protein is lost. Thus, when egg is boiled, albumin is coagulated. Also, when cheese is formed from milk, the globular protein lactalbumin becomes fibrous.
