Question

What is denaturation of proteins?

Open in App
Solution

Denaturation of proteins is irreversible precipitation of proteins brought about by heating the protein with alcohol, concentrated inorganic acids or by heavy metal salts. Protein is uncoiled and its shape and biological activity is destroyed. Thus, when egg is boiled, egg white is coagulated. Also, conversion of milk to curd is an example of denaturation of protein.
