Bile is secreted by the liver and is composed of bile salts, bile pigments, cholesterol and phospholipids. Bile salts emulsify fat in chyme so that pancreatic enzymes may act on it. It breaks up huge fat globules into tiny micelles. Pancreatic lipase (formerly called steapsin) hydrolyzes fats into glycerols and fatty acids. This is eventually absorbed by the small intestine and sent into the blood stream.
