Yeast

  1. Yeast is one of the fungi widely used in food industry.
  2. In baking industry, yeast is used as baking powder for making bread, pastry and cake spongy and soft.
  3. Yeast is also used to raise dough for idli, dosa, bhatura and dhokla.
  4. Yeast cells break down sugar during anaerobic respiration (also called fermentation), and produce alcohol and carbon dioxide.
  5. Bubbles of carbon dioxide gas fill the spaces in dough and make it rise.
