The process in which the cells lose water when placed in a solution with a higher concentration of solutes than the cell is called plasmolysis.
It occurs in hypertonic solutions.
Advantages of plasmolysis:
It is used in determining the osmotic pressure of the cell sap.
This phenomenon is also used to check the growth of fungi and bacteria in jams and jellies by the addition of concentrated sugar solution, as they become plasmolysed in the concentrated solution.
