Perishable food like meat which was a luxury beyond the reach of European poor because the cost of transportation of such goods were more and very difficult. Its existence in the markets were rare and costly.So the poor Europeans could not afford it. But improvements in transportation like railways, lighter wagons and bigger ships due to colonisation had made movement of perishable goods easier.It flooded the markets and prices lowered down making it affordable for all.
