  1. The process of oxidation of fats and oils is called rancidity.
  2. Rancidity causes changes in the smell and taste of food.

For example;

When the chips pack is exposed to air it gets oxidized and results in a change in taste and color.

Therefore, rancidity is a phenomenon due to which the taste and smell of oil food change due to the oxidation of food on its long time exposure to air. We can prevent rancidity by storing food in the refrigerator.
