If by heating a liquid it changes to gaseous form why does dosa when fried becomes solid from liquid instead of becoming gas ?

Order of energy of the state of matter is as follows..

Gas> liquid>gas

This means on heating the solid gets converted into liquid, and further heating converts this liquid into gas.

Heating the liquid does not change it back into solid. In order to convert liquid into solid its energy has to be decreased by cooling the liquid.
