The fruit ripening caused by the plant hormone, ethylene. It converts the plant starch into sugar. Ethylene is produced and released by rapidly-growing plant tissues and is released by the growing tips of roots, flowers, damaged tissue, and ripening fruit. Natural ripening in some fruits is a slow process, which leads to high weight loss, desiccation of fruits and uneven ripening.

So, artificial ripening has become essential. Ethylene gas is used commercially to ripen tomatoes, bananas, pears, and a few other fruits. It is called smoking. This ethylene gas turns the plant starch into sugar. It is a quick process and provides even ripening.

Smoking process has some disadvantages.

  • Artificially ripened fruits are not good for human health.
  • These fruits do not have the smell like the naturally ripen fruits.
  • These fruits will be dry and less juicy as compared to naturally ripened fruits.
