It is oxygen that causes most of the food to spoil, as most microbes require oxygen to live. Nitrogen is an inert gas as it lowers the pH and inhibits the growth of the bacteria. It replaces all the oxygen that causes the food to spoil. Therefore food remains safe for longer period.
