why only yeast powder is used to make bread? why not other microorganisms?

Yeast powder is used to make bread because yeasts convert the sugars present in the dough, to carbon dioxide and ethyl alcohol. This causes the dough to rise and makes the bread soft. Yeast is also used in wine industry. The other organisms such as bacteria are used in fermentation of milk into curd, cheese. Etc.
