Why potatoes and cereals have starch?

Starch is a type of complex polysaccharide made of carbon, oxygen and hydrogen. Unlike other plants potato do not posses leaves in order to capture energy from sun. So they uses the stored energy in the form of starch for food until the newly growing plant is matured enough so that the leaves can supply the food through sunlight. This is the reason why potato and cereals possess starch.
