Pasteurisation, invented by Louis Pasteur in 1864, is a method of preservation of packaged or non-packaged juices and milk. It is a method of treating food by increasing it's temperature to a certain point and then suddenly cooling it to kill disease-causing organisms without altering the flavor or quality. Milk, for example, is heated at about 70°C, held there for around 15 - 30 seconds and then suddenly chilled at 4°C and stored.
