Most nitrates are soluble in water and hence are least likely to be found in minerals. Similarly acetates are also soluble and hence are less likely to be found in minerals. Although this is just a rule of thumb, it is still a pretty good estimate. Most of the carbonates, sulphates and sulphides are not as soluble as compared to nitrates.
