There are different forms of yeast used for the production of fermented products in industries. Saccharomyces cerevisiae is a type of budding yeast also known as brewer’s or baker's yeast and has been the key ingredient in baking, wine making and brewing for centuries. This yeast is able to ferment sugar into carbon dioxide and alcohol and that is why they are used in the baking and brewing industries.

Propionibacterium shermanii is a bacterium which produces propionic acid and carbon dioxide in their anaerobic metabolism of sugars which makes the holes and flavour in the Swiss cheese.
