1. When dry apricots are left for sometime in pure water they will swell up. This is because pure water is a hypotonic solution- which has high water concentration and low solute concentration when compared to the inner concentration of the apricot cells. Because of osmosis water moves both directions in and out the apricot cells but more water will enter the cell than it exits hence the apricot cells will swell.
2. When these swollen dry apricots are placed in sugar solution they will shrink because sugar solution is a hypertonic solution- which as low water concentration and high solute concentration when compared to the inner concentration of the apricot cells. Because of osmosis water moves in both direction in and out the cell but more water exits the cell than it enter . Therefore the dry apricot cells will shrink to maintain the equilibrium,
