Copper has better thermal conductivity than stainless steel. Therefore, they can contain more heat and the container will be hot. Copper is also more expensive than stainless steel. Therefore, it is a smart move to just have the base coated with copper and not the entire vessel. Only the bottom of the vessel is exposed to the flame of the fire.
