Role of bacteria in making vinegar:

  1. Acetobacter bacterium is used for the production of acetic acid.
  2. These bacteria perform anaerobic respiration.
  3. The initial process is called alcoholic fermentation.
  4. It happens when yeast converts the natural sugars into alcohol under monitored conditions.
  5. In the next process, a group of bacteria (called “Acetobacter”) change the formed alcohol into acid.
  6. This is the acetic, or acid fermentation, which results in the formation of vinegar
