When plants and animals die their decomposition leads to to the production of ammonia. There are also some bacteria which convert atmospheric nitrogen into ammonia. This process of conversion of atmospheric nitrogen into ammonia is called ammonification.
Further, this ammonia is converted into nitrites and then into nitrates by a process called nitrification.
And nitrate is the form of nitrogen which can be directly absorbed by the plants.
