Triacylglycerols consist of the trihydric alcohol i.e. glycerol esterified with long-chain fatty acids.They include all the vegetable oils, such as those from corn, olive, palm, and sunflower, and animal fats, such as tallow, lard and butter. It also includes commercial products such as margarines. Triglycerols are hydrolyzed to produce glycerol and 3 fatty acids in the presence of acid and heat.
