Vinegar is a liquid consisting of about 5–20% acetic acid (CH3COOH), water, and other trace chemicals, which may include flavourings. Acetic acid is produced by the fermentation of ethanol by Acetobacter aceti (acetic acid bacteria) which converts ethanol in wine into acetic acid. Lactobacillus specifically acts only on lactose sugar, hence is used in the fermentation of milk to curd. Azotobacter and Rhizobium are bacteria which can fix nitrogen in the soil.
