What is yeast? Why is it used to make bread?

  • Yeasts are single-celled microorganisms and belong to kingdom Fungi. (0.5 Mark)
  • They are used to make bread because in an anaerobic (in absence of oxygen) process of obtaining nutrition, yeasts feed on carbohydrates (sugars) and break them down into alcohol, releasing carbon dioxide. This process is called fermentation. The carbon dioxide makes the bread soft and fluffy. (1.5 Mark)
