when iodeneis applied to any food item which has starch why does the colorof that area of food changes to blue or black.iodene is also blue or black in color so how can it show the presence of starch in food ??​

Starch forms helical secondary structures and can hold I2 molecules in the helical portion; the starch−I2 complex is blue in colour. That is why, it gives blue black colour with iodine and thus forms the basis of the confirmatory test to detect starch.
