Question

Where does the water present in the egg go after boiling the egg?

Solution

Denaturation is a process in which the weak linkages or bonds break.

Due to denaturation of proteins, globules unfold and helix gets uncoiled and due to which its biological activity changes.

In denaturation, primary structure remain the same but secondary and tertiary structures are destroyed.

While boiling, due to denaturation of proteins, coagulation of egg takes place and the water present in it is absorbed in coagulated protein through hydrogen bonding.
