Most enzymes are proteins and get denatured at high temperatures. The denaturation causes loss of enzymatic activity. They work efficiently at optimum temperature and pH. The optimum temperature of most enzymes is around 0 to 40C. The optimum pH varies for every enzyme. For example - the enzyme pepsin secreted in the human stomach cannot work efficiently in the small intestine as pepsin works only at low acidic acidic pH. Any deviation from the optimum pH and temperature causes a decline in their activity.
