Saccharomyces cerevisiae, commonly called brewer's yeast, acts on different substrates like grape juice, sugar cane, cereals, etc. and transforms or ferments the sugars in present in them into alcohol and carbon dioxide anaerobically. This anaerobic process is called alcoholic or ethanol fermentation and is used in the production of alcoholic beverages such as wine, beer, whisky, etc. So, statement 1 and 3 are correct.

Fermentors are large sterilized vessels which maintain optimal conditions for the growth of a microorganisms such that it can produce desirable products. This process is carried out in beakers of different sizes in the laboratory scale process and not in fermentors. Therefore, the production in laboratory is lesser than the industrial scale. So, statement 2 is incorrect.
