Separating a mixture of butter and curd:

Separation method used to separate the components of a mixture of butter and curd is centrifugation method.

Centrifugation: The process in which the denser particles of a substance are separated from the solution when spun on a very high speed is called centrifugation. The instrument used for carrying out centrifugation is the centrifuge machine.

Principle: The heavier particles settle down at the bottom while the lighter particles stay at the top due to the difference in the density of the particles.

Process of separation of butter from curd by centrifugation is as follows:

  • Curd is churned at a fast rate in a blender (a kind of centrifuge machine that is used at home).
  • On spinning, butter separates out and floats on top of the liquid.
  • This separates fat from the curd as butter.
  • The butter is collected by filtration using a strainer.
  • Thus, butter is separated from curd.
