Reasons for most milk produced being converted to milk products:
In most dairy establishments, milk is pasteurized and rendered safe before releasing it to the market. However, milk cannot be kept for a longer time and hence cannot be transported long distances.Therefore, nearly 60% of the product is converted into milk products.
Milk is kept cold (in the refrigerator) to inhibit the growth of any leftover bacteria. It is the multiplication of these benign bacteria that cause the spoilage of the milk.
Lactic acid bacteria produce trace quantities of acetic and propionic acids, which give ruined milk its disagreeable sour flavor and smell (LAB).
Buttermilk, whey, ghee, and skim milk are some of the by-products produced by the dairy industry as it processes raw milk into a variety of goods including butter, cheese, cream, yogurt, ice cream, condensed milk, dried milk, etc.
