Temperature is one of the important factor which keeps bacteria under control. In food, bacteria may multiply if it is stored at the wrong temperature. Usually, bacteria grow and multiply at between 5oC and 60oC. Above 60oC, bacteria are killed whereas below 5oC, bacterial multiplication is reduced. At the cold temperature, bacteria enter a dormant stage because the activity of bacterial enzymes is reduced at low temperature.
