Microorganism play an important role in production of food. Mainly used microorganism in food production are bacteria , molds and yeasts.
BACTERIA
Strains of streptococcus , Lactobacillus are used in production of fermented food and dairy products. Lactobacillus is used to produce yogurt
Lactic acid bacteria are used for coagulation of milk that can be processed to produce wide variety of cheese.
MOLDS OR FUNGI
they are used ion ripening of various types of food products . they produce enzymes like amylase used in making bread or citric acid used in soft drinks.
YEASTS
They have ability to ferment sugars into ethanol and carbon dioxide and hence they are extensively used in food industry. saccharomyces is used in fermentation of beers.
