Why do we use chemicals such as sodium benzoate and sodium meta-analysis bisulphate as chemical preservatives? Why don't other chemicals?

Sodium benzoate is when is added in the food , fruit juices , it gets converted into benzoic acid, it acts as bacteriostatis, fungistatic. Sodium meta bisluphite is also used as preservative as well as antioxidant. They all can be used effectively as particular amount of these chemicals are not harmful if added in food. And antibacterial too.
