Because HClHCl is not an organic compound.

Mineral acid might perhaps be a misnomer but mineral acids are called also called 'inorganic acids'. While the definition for organic compounds might be a bit blurry, organic compounds are those compounds which contain carbon . Where's the carbon in HCl? HCl is clearly inorganic, so it is a mineral acid. By the same argument, water is also present in our body and so is calcium, phosphorus etc. but we do not call them organic, do we?
